Colder weather means soup! We're sharing how to make a delicious Butternut Squash soup with one of our favorite plant-based products:
Planet Oat Oatmilk!
WHAT YOU NEED:
1 Butternut Squash, peeled, halved, and seeded
1 sweet Onion, medium dice
2 Carrots, medium deice
3 Celery Sticks, medium dice
2 cups of Planet Oat Oatmilk, Original
One 32oz of Vegetable Broth
2 tsp of Extra Virgin Olive Oil
2 gloves of garlic, medium dice
1/4 tsp Salt
Pepper
Croutons
Pumpkin Seeds
HOW TO MAKE:
Preheat your oven to 400 degrees.
Cut your Butternut Squash into bite-sized chunks and place them on a baking pan.
Drizzle a generous amount of olive oil onto the Butternut Squash.
Sprinkle some salt and pepper onto it.
Bake it in the oven for about 45 minutes to an hour.
In another pot, add chopped onions and cook them until they're translucent.
Thinly chop celery and carrots, add them to the pot and stir.
Add the chopped garlic to the pot and stir. Keep stirring until all the pot ingredients are softened.
When the Butternut Squash is cooked, add it to the pot.
Add in some vegetable broth. Bring the broth to a boil, then reduce the simmer.
Stir in the Planet Oat Oatmilk.
Once everything reaches a slight simmer, add it all into a blender and blend it until it is smooth.
Add your soup to a bowl and garnish it with croutons pumpkin seeds.
Serve and enjoy!
